How to make spinach and ricotta ravioli at home

Who doesn’t love ravioli! Spinach and ricotta is a classic ravioli combination and tastes simply divine. These are flavour bombs and can be served with sauce or simply toss it in butter and sage! You can store these too…look for the tips at the bottom! You can use readymade pasta sheets but best to use fresh pasta!

Cook Time: 10 Mins
Yield: 16 portions
Ingredients: –

Pasta dough – check out the fresh pasta dough recipe.
For Filling:

  • Ricotta – 150 gms
  • Parmesan – 25 gms
  • Spinach – 250 gms
  • Egg – 1 (optional)
  • Salt (as per taste)
  • Pepper – ½ tsp
  • Nutmeg – ¼ tsp

Ravioli Instructions:

For Spinach and Ricotta filling:

  1. Blanch the spinach leave and squeeze out as much water as possible. Chop it finely & bring it to room temperature.
  2. In a bowl add ricotta cheese, parmesan cheese, spinach, salt pepper & egg and blend it with a spoon.
  3. Eggs act as a binder. But I didn’t use one in my filling and it didn’t make much of a difference.

Making Ravioli:

  1. Roll out thin pasta sheets. You can use the pasta machine if you have one. If not, then you can follow what I did.
  2. I used a rolling pin to roll out on my granite counter directly.
  3. Please see the pic for how thin you need to roll. You can see the granite counter top underneath.
  4. Ensure you roll out in a rectangle shape. (roll out 2 sheets of the same size)
  5. Now on one sheet place small balls of filling.
  6. Now brush all the edges around the filling with water.
  7. Then place a pasta sheet on top of it and press along the edges.
  8. Then using a cutter cut out the ravioli packets. Ensure all edges are sealed.
  9. Place the ravioli pockets onto a tray over semolina.
  10. Let me rest for 15 mins. You want the pasta to dry up a little bit.
  11. Now take about 3 litres of water in a heavy bottom pan. Add 1-2 tsp of salt.
  12. Bring the water to boil, then add the dried ravioli. They will sink at first.
  13. Once they float take them out and drain it. It will take about 2 – 3 mins.

  • In a hot pan, add butter & sage. Let the butter melt and sauté the sage for few seconds. Toss the ravioli till they are coated. Season it and serve.

How to make fresh pasta from scratch at home

Fresh Pasta dough – I am talking about homemade fresh pasta from scratch! Doesn’t it sound delicious? Yes, it is! Some of you might think authentic pasta dough recipe call for a different flour, e.g. 00 flour. This flour is ideal for dishes like pasta and pizza but not necessary. I have used All-purpose flour for this one and I loved how it turned out. Try out this super easy pasta dough recipe and let me know how it goes for you…
Prep Time: 10 minutes
Cook Time: 15 Mins
Yields: 16 ravioli (I made ravioli with this dough)

  • Eggs – 3
  • Olive Oil – ½ to 1 tsp
  • Crushed Pepper – 1/8 tsp (optional)
  • Salt – Pinch 1/8 tsp
  • All-purpose Flour/Maida – 1 Cup(plus 1-2 Tbsp. extra)

  1. Take a mixer, I used my food processor’s big bowl attachment. (see the image)
  2. Add 3 eggs, salt, pepper & oil to it.
  3. Give it a whiz for 2-5 seconds just to combine everything.
  4. Now add 1 cup flour to it and turn on the mixer. Let is run for a couple of seconds.
  5. Stop and check the dough. If it too wet & sticky add 1 or 2 tbsp flour. Mix it.
  6. Once the dough is going in circles and can’t be mixed any further by food processor/ mixer stop and take out the dough,
  7. Knead the dough so it comes together and is smooth.
  8. Add a touch of olive oil and place the dough in a bowl to rest for 30 mins.
  9. After that, it is ready to use.

Homemade pasta without machine

  1. If you don’t know a food process, no problem let’s go the traditional Italian way.
  2. Take flour and make a well.
  3. In a bowl break & beat the eggs.
  4. Add eggs, oil, salt & pepper into the well.
  5. Now slowly take the flour from inside edge and start combining with egg mixture.
  6. Continue this process until flour & egg mixture is combined.
  7. Knead the dough until smooth dough.
  8. Lightly coat the dough with olive oil and rest it for 30 mins.
  9. Now you are ready to use the dough.

This is one versatile sauce. You can use it for pastas, ravioli and of course your PIZZA! Many people call it by different names. It’s red pasta sauce, tomato pasta sauce or pizza sauce.

Prep Time: 10 minutes
Cook Time: 20 Mins
Yield: good for 2 pizzas / for pasta serving 2 people.
Ingredients: –
Pizza Sauce

  • Tomatoes – 400 gms (boiled or steamed) you can used canned ones too

      • Garlic – 1 large clove (add 2-3 cloves as I love garlic)
        • Olive oil – 2 TBSp
          • Dried Oregano 1-2 tsp
            • Dried Italian herbs 1 -2 tsp
              • Salt as per taste
                • Pepper as per taste
                • Pizza Sauce Recipe:
                  1. In a pan heat up olive oil.
                  2. Add garlic and sauté a little.
                  3. Crush the tomatoes using hand or blender. Ensure its smooth paste. Add the paste to the sautéed garlic. Cook it for 5-10 mins until it is a thick paste.
                  4. Add dried oregano. If you want, you can use mixed Italian herbs too.
                  5. Add salt, pepper as per taste. Cook for 2 mins and then cool the sauce.

                  Tip: For Pasta sauce add some fresh basil and keep the consistency more loose.

How to make pizza dough at home

Who doesn’t love pizza!! A gorgeous Italian mouth-watering dish which has reached nooks and corner of the world.  Pizza is best had when it’s fresh and hot. The best part is that you can make as many variation as you want. This recipe is an easy and you can enjoy ‘just out of the oven pizza’ in the comforts of your home. Try making pizza from scratch and I am sure you will be thrilled with the results.

Prep Time:20 minutes
Cook time:1 hour
Yield: 2 8” pizzas

For the Dough:

  • All Purpose Flour (Maida) – 100 gms
  • Yeast – 3 gms
  • Sugar – 2 gm
  • Olive oil – 13 gm
  • Water- 50-60 gms
  • Salt – 2 gms

For the pizza sauce: Click here (when I made this pizza I already had some leftover sauce)

For Pizza Toppings:

  • Sliced Tomatoes
  • Fresh basil
  • Olives
  • Paneer
  • Mozzarella Cheese
  • Or whatever your heart desires

Keep the Pizza Sauce ready before the dough as it will cool down by the time the dough is done.

Pizza Dough Recipe:

  1. Combine all-purpose flour, yeast and sugar. Using water knead this mix into a dough. Use little water at a time. If you feel the dough is very dry you can add little more water. Keep kneading till the dough is nice and stretchy.  (See pics below)
  2. It’s important for the dough to be nice and elastic. You can check it by doing window pane test. Take a small dough ball (size of a marble). Flatten it and stretch gently. Keep pulling till it becomes thin. So thin that it is opaque and you can see your finger through it. If the dough tears, then you need to knead more.  (See pics below)
  3. Once you have is ready add oil and knead. All little oil at a time. You will feel that it is not coming together, but keep kneading until all the oil is used. (See pics below)
  4. Now take ball of the pizza dough and roll it out in a circle. Use your fingers to form a side crust. I placed my dough in a pan to make it a little deep dish style. If you want a thin crust pizza, then spread the pizza dough out and place it on the reverse side of baking tray. Ensure you spread some semolina on the baking tray before placing the pizza dough.
  5. Now spread the pizza sauce on top of the dough with help of a ladle in a circular motion.
  6. Now let the dough proof for 20 mins. Most of us don’t have a proofing machine, so you can place it in dry warm place. The dough will rise slightly.
  7. When dough is proofing, pre-heat the oven at 200°
  8. Once done, add your choice of toppings. You can whatever your heart desires.
  9. Now the best part, grate mozzarella cheese GENEROUSLY! Haha
  10. Bake the pizza in a pan or on a tray for 10 -12 mins.
  11. Once done, cut and enjoy all your hard work!
